What You'll Need

  • 1 cup bulgur wheat
  • 1 large bunch of fresh parsley, finely chopped
  • 1 small bunch of fresh mint leaves, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/2 red onion, finely chopped
Juice of 2 lemons
  • 1/4 cup extra virgin olive oil

Salt and pepper to taste
For an authentic flavour, blend ground fennel, cumin, coriander, Kashmiri chillies, black salt, ginger, mango powder, citric acid, carom seed, black pepper, mint and sometimes asafoetida seeds.
